Lunario Civitas Description
THE VINEYARDS
Pecorino (85%) and and other authorized varieties, grown on medium aged vineyards cultivated in Guyot shape with low production yield on loose soilstructure.
THE WINEMAKING
The grapes are sent to the pneumatic press for soft crushing, then the must is fermented with their indigenous yeasts at low temperature (12-14°C) in stainless steel tanksfor about 30 days.
AGEING
In stainless steel tanks, followed by ageing in bottle.
TASTING NOTES
Straw yellow color, intense nose with hints of broom, white fruits and ethereal. The palate is fresh, intense, fruity and fullbodied.

Elaborated seafood dishes, medium cured cheese, pasta dishes, white meats.
