The term “Coyote” typically refers either to a naturally occurring hybrid of two different species or to a specific subspecies of Agave americana that is large and pale green in color, sometimes weighing nearly a half a ton at harvest (in this case, at 14 years of age), and often carrying a distinct profile of pepper and tropical fruit. Exceedingly rare!
