SECRET TECHNIQUES
Fortunately for our marketing department, Italian style pilsners are a fantastic pairing with Italy's most popular culinary creation, pizza! Italian pilsner is a modern style with origins in Northern Italy where it was concepted as German pilsner with an English hopping schedule. The style takes its cues from Italian cooking where simple, fresh ingredients create fantastic flavor. In that vein, we brewed with only two types of malts, pilsner and Munich, and two types of hops, German Select hop pellets and Chinook whole hop cones, and crafted this full flavored lager. Using our hopback (a vessel designed to add hops after the wort is boiled but prior to fermentation) we extract the finer hop flavors without the grassy character of beers where hops are added directly to the fermentation vessel.
