The Symbiose is a blend of the oldest fermentations known.
The fermentation of grains, honey and fruit. Spontaneous mead has been a long journey. Translating lambik to honeywine creates challenges. When carefully blending Symbiose, starting with blending the barrel aged mead with lambik. Bringing aroma and structure.
Adding Pajotse Cider week by week, until we hit the right character in a proud Symbiosis.
This is a unique Boerenerf. The vinous character is intertwined with honey and barrel notes, a steady lambik body with a suiting crisp acidity of the cider. Our Scottish Highlander graze in a heather meadow, contributing to a biodiverse ecosystem in the Zoniënwoud.
